Fresh meat is hydraulic; it is high in moisture (approx. 70%) and fat. Standard single-screw extruders struggle when fresh meat paste exceeds 20-30% of the total formulation. The excess steam and lubricity destroy the critical mechanical shear needed to gelatinize the starches and create the kibble structure. High inclusion levels often result in soft, dense, or oily kibble that lacks the satisfying "crunch" and shelf stability.
The Extrusion Solution: Pre-Conditioning and Twin-Screw Geometry
To overcome this, manufacturers are adopting twin-screw extrusion technology specifically engineered for viscosity control. Twin-screw systems offer positive displacement, meaning the interlocking screws actively pump the high-fat dough through the barrel, regardless of its consistency. Manufacturers optimize screw profiles with specific kneading blocks to manage shear energy while injecting precisely controlled steam.
Crucially, modern systems are pairing these extruders with advanced pre-conditioners. These large mixing vessels, mounted above the extruder, use intense differential mixing and steam injection to pre-hydrate the dry ingredients and "cook" the meat slurry before it enters the extruder barrel, stabilizing the hydraulic load.
